Coconut Black Eyed Beans /Kunde Beans

Black eyed beans aka Cowpeas/goat beans or Kunde/Thoroko beans in my native language come in two colours, red or white.

They are delicious when prepared with rice, ugali or chapati.

PREPARATION

For dinner, I am preparing 1.5 cups of black eyed beans/Kunde beans. I usually soak my cereals for between 6 – 24 hrs to reduce some of those indigestible sugars that cause gas/flatulence & bloating. Soaking also helps to get rid of trapped weevils and saves alot of cooking time.

  • 5 Cups of Black eyed beans/Kunde beans
  • 1 Red Onion
  • 1 Green Pepper
  • 2 Ripe Tomatoes
  • 1 Tablespoon of grated/minced Ginger
  • 1 Tablespoon of grated/minced Garlic
  • Preferred spices
    • 1 Tablespoon of Spanish Paprika powder
    • 1 Teaspoon of Turmeric powder
    • 1 Teaspoon of Garlic powder
    • Fresh Crushed Black Pepper /1/4 Teaspoon of Black Pepper
    • 1 Tablespoon Royco Mchuzi mix
  • 1 Cup of Water
  • 1 – 1.5 Cups of Coconut Cream
  • Salt to taste
  • METHOD

    Step 1: Press Sauté on your pressure cooker and press start depending on your pressure cooker model.

    Step 2: Add onions together with green pepper. Add some oil to fry the onions until golden brown.

    Step 3: Add in the garlic & ginger and cook for 1 minutes max.

    Step 4: Add in the Tomatoes (thinly sliced)

    Step 5: Add in the spices, salt and mix well.

    Step 6: Add in the soaked black eyed beans / kunde beans and mix well. The beans should be raw.

    Step 7: Add 1 cup of water or until the beans are slightly submerged.

    Step 8: Place the pressure cooker lid and seal the valve.

    Step 9: Cancel the Saute function. Input the manual settings to 13-15 minutes.

    Step 10: Once the 15 minutes are done.. quick release the pressure and open the lid. Press saute again and add in Royco mchuzi mix and cook for a minute or two followed by the Coconut Cream.

    **NOTE ** The Coconut cream is absolutely optional.

    Switch off the pressure cooker and serve with rice, ugali or Chapati.
